Winter is the best time to bring out the cookbook and search for some good soup recipes to serve on cold nights. Crock Pot Minestrone Soup

4 cups of chicken broth
4 cups tomato juice
1 Tbs. dried basil
salt and pepper to taste
2 diced carrots
2 chopped celery stalks
1 chopped onion
garlic to taste
1 can (28 ounce) diced tomatoes, undrained
1 1/2 cups rotini pasta
1 can kidney beans, rinsed

Add all ingredients (except pasta) to the slow cooker. Cook on low for 7 hours or on high for 5 hours. Add pasta and cook on high for 15 minutes or until pasta is tender. Serve with grilled cheese sandwiches for a delicious and comforting meal.

Chicken Tortilla Soup

1 chopped onion
2 Tbs. minced garlic
2 cups of chunky salsa
2 tsp. olive oil
6 ounces cooked chicken breast, chopped
1 1/2 cups frozen corn
1 tsp. chili powder
cayenne pepper (optional)
4 (14-ounce) cans chicken broth
avocado, sliced
tortilla strips
Cheddar cheese, shredded
sour cream

Add all ingredients to a large pot and cook thoroughly. When finished, top soup with shredded cheese and tortilla strips. This soup can be served alone or with a dollop of sour cream and some avocado slices.

Black Bean Soup

2 cups beef broth
2 cups water
1 Tbs. olive oil
1 1/2 chopped onions
3 cans of black beans (do not drain or rinse)
2 cups of chunky salsa
1 Tbs. adobo seasoning
low-fat sour cream
shredded Cheddar cheese

Rinse beans and use a fork to mash. Add salsa to bean mixture. Saute onions in olive oil in a pot or Dutch oven. Add the beans, broth, water, and seasoning. Cook until heated through. Top with cheese and sour cream. This soup is best served with tortas.
