The best part ? This recipe makes a large batch perfect for feeding a big family on a Sunday evening or a gathering of friends for a birthday party .

Start by choosing a beautiful, clear vessel to build the dessert inside. Since this spring dessert tastes as good as it looks, show it off! Use a trifle bowl , a new round fish bowl, or a large clear mixing bowl to assemble and serve the dessert.

Tangy, tropical angel food cake trifle

  • 1 bakery-made angel food cake
  • 2 cans of mandarin oranges, drained
  • 2 cups of fresh pineapple , chopped, bite-size
  • 1 jar maraschino cherries, drained
  • 2 tubs of whipped cream, or use 6 cups of homemade

Prep the cake by tearing it into small, bite size chunks. It doesn’t need to be neat, but the pieces should all be of a similar, manageable size.

Start layering the ingredients in the serving container.

First, place a layer of cake on the bottom of the bowl. Next use a spatula to smooth a generous layer of whipped cream on the cake. Top the whipped cream with the pineapple pieces.

Add another layer of cake topped with whipped cream. Now spread the two cans of drained mandarin oranges on top of the whipped cream .

Finally, finish with the third layer of cake. Top it with the remaining whipped cream and carefully decorate the top layer with the maraschino cherries. Try making a pattern with the fruit, since this is the very top of the cake.

Refrigerate the cake for an hour before serving so the whipped cream can moisten the angel food cake. Then use a large spoon to serve the cake in scoops. Serve the light, refreshing cake with glasses of flavored ice tea . Try adding a splash of mango juice in the kids’ drinks or a squeeze of lime for adults.

Variations: For a creamier cake, mix prepared pudding into the whipped cream. Choose a tropical flavored pudding such as lemon or coconut . Then top the cake with shredded coconut and chopped macadamia nuts in addition to the cherries.

Love chocolate? Prepare the same trifle cake with chocolate-flavored whipped cream. Substitute sliced bananas for the pineapple and add shaved chocolate to the top cherry layer. Serve the cake with cups of hot, Mexican cocoa! Delicious!
